Brown Butter Pecan Cookies

Makes 16 large cookies



Ingredients

  • Pecans (DUH)

  • Unsalted butter

  • Eggs

  • Vanilla extract

  • Sugar

  • Cinnamon

  • Corn starch

  • Flour

  • Baking Soda

  • Salt

Preparation

  1. Brown your butter. Watch a Youtube video to ensure success. Set aside for batter later.

  2. Saute chopped pecans in a dose of butter until toasted. Set aside.

  3. In a large bowl combine flour, cornstarch, salt, cinnamon, and baking soda; whisk well to combine.

  4. Add in both sugars, warmed browned butter and vanilla. Mix in a large bowl. Wait until the mixture has cooled some before adding in eggs to ensure the eggs don't “cook” in the mixture.

  5. Fold in chopped pecans and then cover and refrigerate for 3-4 hours.

  6. Preheat the oven to 375. On parchment paper, evenly place your balls of dough (3 TBSP is perfect); Press in a whole pecan in center; Bake for 10 - 11 minutes.

  7. Serve! Sprinkle salt or granulated sugar after removing it from the oven for some extra love.


Tips

Eat while warm and save for no one. You spent enough time cooking these bad boys… Calories don’t count.
