Dijon Chicken Pasta

Ingredients​​

  • 1 lb Chicken, boneless skinless tenders

  • 2 cloves Garlic

  • 2 Shallots

  • 2 cups Spinach, fresh

  • 2 tbsp Sun-dried tomatoes

  • 2 tbsp Dijon mustard

  • 2 tbsp Italian dressing

  • 1 box Rigatoni pasta

  • 1 Salt and pepper

  • 1/4 cup Half and half

  1. Cook pasta per package instructions.

  2. Heat up a pan on medium-high, and add in some olive oil.

  3. Dice up your chicken and season well with salt and pepper. Add in the pan to brown.

  4. Chop your shallots and garlic and add them to the pan when the chicken is almost cooked through. Cook together for 3 minutes. Be careful not to let the garlic burn.

  5. Lower heat to medium-low and add in your sun-dried tomatoes, spinach, cream, mustard, and dressing. Stir together.

  6. Strain pasta and add into the pan. Toss together and serve.
